To create this elegant wine, all stages of the production process are carefully and strictly followed. The grapes come from vines aged 30-35 years from a parcel called 'Croquamots' and are harvested in 12 kg crates to preserve the maximum freshness of the fruit until it reaches the fermentation vessels. It takes place in concrete containers over a period of 20 days. 90% of the wine is aged in them for 10 months and the remaining 10% in new oak barrels.
