Description
Testament vineyards are located in the Northern Dalmatian wine region, in the immediate vicinity of the medieval city of Šibenik. With a unique climate and specific soil, in the Šibenik region, grapes have constantly fought to grow and develop. This ancient ritual of survival can be felt and seen in the rich and deep colors of Testament wines, as well as in their intense tastes and aromas. The unique Testament wines are produced from Pošip and Babić grapes. Both varieties are indigenous, and Babić grapes only grow in this part of the Dalmatian coast, where Testament vineyards are located. Testament wines are produced organically, utilizing the advantages of the special microclimate and soil in the region, which gives them a particularly rich and complex taste.
Vinification: Quick processing (destemming, crushing, and gentle pressing with 2 hours of skin contact). Only the first juice is used. The first fermentation lasts 2 months with stirring on the lees. The second fermentation takes place in bottles for 12 months on the lees before disgorgement. It contains 6 g/l acidity.
