Description
At the 500-year-old Zehenthof farm in Kammern in Kamptal, the Hirsch family dedicates all their passion to winemaking. Their philosophy is: the soil makes the wine. Even more than the grape variety, the location determines the character of the wines. Therefore, Hirsch wines are always wines of origin. For this reason, only the Grüner Veltliner and Riesling grape varieties are used. The result is wines with individuality, from biodynamically cultivated vineyards, that reflect the power of the region.
The terraced south- and southwest-facing slope has a unique geological history, which is preserved in this particular area. The exposed bedrock consists of reddish-brown sandstone with a high feldspar content, coarse conglomerates, and small siltstone. Currently, Heiligenstein is considered by most wine lovers to be one of the best vineyards in all of Europe. Here, the volcanic rock was covered with desert sandstone from the Permian period – this formation, which originated about 250–270 million years ago, offers a solid basis for growing the best Rieslings.
Harvested at the end of September. Whole bunch pressing, fermentation without temperature control and exclusively with natural yeasts. Aged in both stainless steel tanks and large oak barrels. On fine lees until mid-June. Sure aging potential.
Nose characterized by its origin, spicy and fruity at the same time, many wild herbs, dried pineapple, dense, a little candle wax, cool, preserved, pink grapefruits; juicy, very lively, unpretentious fruit, with a lot of grapefruit on the palate, slightly sparkling, smoothly flowing towards the end, fine finish.
