The wines are vinified in temperature-controlled stainless steel vats. Malolactic fermentation takes place in tanks. Before bottling, the wines are aged for an average of 18 months in approximately 60% new French oak barrels. There is also a second wine, Le No 2 de Maucaillou. There is also a third wine, Maucaillou Haut Medoc.
