The grapes come from their own 20-year-old vineyards, cultivated in the area of Vekhtite Lozyata (Old Vineyards) in the village of Lozenets, Straldzha Municipality, on cinnamon forest soils. The climate is characterized by dry spring and autumn, and mild and warm winter.\u003c\/p\u003e\n\u003cp\u003eThe harvest took place from October 15th to 25th – manually, in 10 kg crates. The technological process includes destemming and sorting of the grape berries on a conveyor belt, crushing the grape pulp and cold maceration in a 5000 l metal tank, alcoholic fermentation with temperature control, delestage during fermentation, post-fermentation maceration on the solid parts; malolactic fermentation in new French oak barrels, decanting the wine and refilling into barrels.
