Description

Vinification:

Sorting of whole grape berries using Bulgaria's only Delta R2 Vistalys optical sorter. Cold maceration at 8ºC in 6-ton oak vats and thermo-insulated stainless steel fermenters of 7000 L each. Controlled alcoholic fermentation with post-fermentation maceration. Spontaneous malolactic fermentation in new French oak barrels. Aging and storage for 18 months in new French oak barrels at controlled temperature and relative air humidity.
