Vinification:
Sorting of whole grape berries using Bulgaria's only optical sorter, Delta R2 Vistalys. Cold maceration at 8 ºC in 6-ton oak vats and 7000 L thermoregulated stainless steel fermenters. Controlled alcoholic fermentation with post-fermentation maceration. Spontaneous malolactic fermentation in new French oak barrels. Aging and storage for 18 months in new French oak barrels under controlled temperature and relative humidity.
