He has gathered his extensive wine knowledge in some of the most renowned two Michelin starred restaurants, like L'Enclume in Cumbria, Le Manoir aux Quat'Saisons in Oxfordshire, Ikarus/Hangar 7 in Saltzburg and Palais Coburg's Silvio Nikol restaurant in Vienna. The Palais Coburg is a special place where he spends five years holding one of the largest and breathtaking wine collections in Europe, with over 60 000 bottles and 5500 bins on its wine list. Its wine selection has been awarded the Best Wine list in Europe for 2015 and 2016, according to the renowned Fine Wine Magazine.
