Making good wine is an art, we are convinced, from the Minkovi family, especially when the sweet juices of a thousand-year history float in it.

Chateau Copsa has blossomed in the heart of the Rose Valley. The winery draws knowledge and inspiration from the lands of the ancient Thracians, who believed in its divine origin. They celebrated the power of the elixir with mystical rituals and wild feasts in honor of the god Dionysus. In the meantime, they have become one of the best masters of wine in Europe - a heritage passed down through the centuries to the present day.

Charged by this rich past, today we mix ancient legends and traditions with modern technology.

Chateau Copsa is one of the few family wineries where we take the whole process - from the grapes to the bottle - into our own hands. In this way we can personally follow every moment of its development and make sure that it lives and reveals even more interesting and deep notes of its character, even closed in glass. Therefore, in 2005, we made a modern winery base with its own laboratory in the town of Klisura, just a few kilometers from our vineyards. And to ensure the proper storage of our products, in 2008 we built the majestic Chateau Copsa Castle. Built according to the canons of medieval architecture, we built our cellar in its stone foundations and there, in French, American and Bulgarian oak barrels, our best selections mature.

Chateau Copsa's own vineyards are 50 hectares, located in the heart of the Rose Valley. This micro wine region, nestled between the southern slope of Stara Planina and Sredna Gora, is extremely favorable for the cultivation of high quality white wines. The intense aromas of the pink massifs and lavender fields, the constant movement of air masses, the mild climate provided by the two mountains surrounding the valley, all contribute to the unique terroir of the area.

The soils are cinnamon forest mixed with limestone and gravel on the surface, which plays the role of natural drainage. Annual precipitation is significantly higher than the average for Bulgaria, which ensures constant soil moisture throughout the year. In addition, the naturally cold mountain air of the region helps to cool the fruit and achieve a high concentration of aromas.

The region of the Rose Valley is extremely favorable for growing white varieties - the emblematic local variety red muscat, muscat otonel, chardonnay, sauvignon blanc, which make up 80% of our vineyards. The red grape varieties we grow are Cabernet Sauvignon and Merlot. Due to the cooler mountain climate, they ripen much later and have their own unique terroir feature, which makes them distinctive.

Chateau Copsa is a place where we welcome and share our wine with our friends and guests. And as their number is constantly growing, in 2017 we added Maison Copsa, a boutique art hotel and restaurant. We have turned them into an alternative and discreet oasis for urban people, where among the beauty of the Rose Valley they can indulge in the slow rhythm of the chateau and forget about the world beyond it… Here they can spend their time in contemplation, dreams, sweet conversations with friends under the stars of the night sky or in plans for more small escapes.
