From the Thracians until today, the only livelihood in the area is the cultivation of grapes and wine production. Not a single ancient author has sung the Thracian wine and the recipes that are passed down from father to son, for generations ... This is what inspired me!

Edoardo Miroglio Wine Cellar is surrounded by 220 hectares of vineyards. The winery is an impressive combination of authentic architecture combined with the latest technologies for wine production. The whole complex merges naturally with the environment.

The cellar is surrounded by vineyards that stretch over the hills. The lake and the climate of the region offer excellent conditions for growing grapes. Above the cellar rises the boutique hotel "Soli Invicto", which has a tasting room, a fine restaurant, a lobby bar and an outdoor pool. The design and furniture of the hotel will satisfy even the most refined tastes.

The wine cellar specializes in the production of high quality white and red wines. In the winery's portfolio you will also find rosé and naturally sparkling gross wines using classic technology. The main brands offered on the Bulgarian and export markets are Elenovo, Edoardo Miroglio, Sant'Ilia, St. Ilia Estate and Soli. The wines from the Elenovo and Edoardo Miroglio series are offered mainly in selected restaurants and hotels, as well as in specialized wine shops, and the Soli, Sant'Ilia and Saint Ilia Estate brands are intended for retail sales in the country and for export.

Since 2013, Edoardo Miroglio wine cellar has received certification for organic vineyards (Bouquet, Traminer, Vionie and Mavrud) and started production of 3 new organic wines - Bouquet Nouveau, Vionie x Traminer and Mavrud x Vionie.

Terroir

The vineyards of the winery are located on the slope that descends to the village of Elenovo. The physico-chemical composition of the soil, the soil layers, the microclimate, which is created between the hilly area located at over 400 meters above sea level on the hill "St. Elijah ”, give the region the necessary properties for the production of high quality wines.

Vineyards

The density of plantations is 5,000 plantations per hectare. The winery processes the vineyards, applying the classic method of Piedmontese viticulture, valued and copied worldwide, adapting the cultivation technology to the specifics of the region. Growing a fertile and quality vineyard cannot be improvised. It requires a lot of work and experience, knowledge and passion.

Climate

In Elenovo the average spring and autumn temperatures are low and are characterized by strong temperature differences. Average rainfall favors the cultivation of vineyards. Summers are warm but not stuffy and with low humidity
