Levent Ruse Wine house
Ruse Wine House specializes in the production of boutique series of wines from 2000 to 15,000 bottles. It was established in 2005 by the brothers Plamen Bobokov and Atanas Bobokov and oenologist Tsanko Stanchev. It is housed in a unique military facility with nearly 200 years of history. One of the goals of the master winemakers is to preserve the traditions and achievements of winemaking in the Ruse region. In 2005 the first wines were produced in the winery from the varieties Traminer, Sauvignon Blanc, Chardonnay, Vratsa Temenuga, Merlot and Cabernet Sauvignon. The grapes are specially grown in selected vineyards from areas that have been studied for decades.
The control over the quality of the grapes begins with monitoring of all agro-technical measures carried out by the grape producers. The transport of hand-picked grapes in cassettes is done from the winery with refrigerated trucks at a temperature of 12-15 degrees.
The winery applies gentle technologies to grapes and wine in order to preserve as much as possible the fruit character and varietal aromas. We carry out the fermentation with pure cultures of wine yeast in small fermenters made of oak and stainless steel, and especially for the Chardonnay variety in new French and American oak barrels. We perform temperature control at each stage of the process.
Behind the 2.30-meter-thick ancient stone walls, which guarantee a constant year-round temperature, the wines are aged in French and American oak barrels.
The capacity of the winery is 150,000 kg. grapes, from which about 110,000 bottles of wine are obtained.
