Сирата обича слънчевия ни и сух климат, постигайки перфектна ароматна и фенолна зрялост. Беритбата и подборът се извършват на ръка. Провеждаме 20 дневен контакт на ципите на зърната с малка екстракция. След млечно-киселата ферментация се извършва във френски дъбови бъчви за 12 месеца. След бутилиране отлежава в бутилките за 9 месеца. Не е филтрирано, възможните утайки са естествени.
