Midalidare Premium Selection Sauvignon Blanc is an amazing white wine, presenting its terroir in its full glory. The grapes for it are selected from the own vineyard Shipkata, located in the village of Mogilovo. The variety is planted on the eastern slopes of three neighbouring vineyards on alluvial soils with a high carbonate content and the presence of clay. The microclimate in Mogilovo is characterised by large temperature amplitudes, mild winters, warm summers and an excellent ratio between rainfall and sunshine.

Harvesting takes place in mid-September, with the grapes going through two stages of manual sorting. The grape juice is then separated in a press and a cold curing is carried out. After clarification at a controlled temperature, slow fermentation begins, which takes about 20 days. The wine is aged for about 4 months on the lees, after which, if necessary, batonnage is carried out. Before bottling, the wine is filtered, clarified and blended.
